Ethan has published some of the only YouTube videos I can find that demonstrate how diffusers sound. Another company produced some short samples (balloon popping, wood block) and used a binaural mic. This provides a really great effect when listening on headphones.
Does anyone have a binaural headset to record some examples? The Sennheiser Ambeo smart headset is iOS device compatible abut also able to be used with a computer with a lighting to USB-C adapter. The sound quality is quite good. They have also been discounted, and are quite cheap right now.
Does anyone else see the need for binaural recordings of rooms before/after diffusers installed in different positions?

That's pretty interesting. Setting some kind of binaural demo seems like a good way for potential acoustics customers to try before they buy. I have a recorder which supports ambisonic recording but not a mic. Regardless, I don't have diffusion either nor have I used it.
There are so many immersive formats lately: ambisonic, Atmos, Spatial Audio... Though it's highly unlikely a majority proportion of audio enthusiasts will install a legit Atmos setup, some headphones and headphone correction software are trying to get you close.
I'm still in stereoville myself.
